Blueberry Vinaigrette
INGREDIENTS
- 1/4 cup blueberry vinegar (see recipe
in “Condiments” section) - 1 1/2 tsp Dijon mustard
- 3/4 cup olive oil
- 1 tsp fresh thyme or ½ tsp dried thyme
- salt and freshly ground pepper, to taste
Pour the blueberry vinegar into a small bowl. Whisk in the mustard. In a slow steady stream whisk the oil into the vinegar. Add the thyme. Season with salt and pepper.
