Karen’s Blueberry Buckle
INGREDIENTS:
- 2 cups flour
- ¼ cup sugar
- 2 ½ teaspoons baking powder
- ¾ teaspoon salt
- ¼ cup shortening
- ¾ cup milk
- 1 egg
- 2 cups blueberries
TOPPINGS:
- ½ cup sugar
- 1/3 cup flour
- 1 teaspoon cinnamon
- ¼ cup soft butter
Combine all ingredients except blueberries and topping. Beat vigorously for 30 seconds. Stir in blueberries. Spread in greased 9 x 13 or 7 x 11 inch pan. Mix topping ingredients together until crumbly and sprinkle over batter in pan. Bake at 375 degrees for 45 to 50 minutes.
