Blueberry Vinegar

INGREDIENTS:

  • 2 cups apple cider vinegar
  • 1/2 cup blueberries
  • 1 tablespoon granulated sugar
  • Slice of orange or lemon
  • Sprig of mint
 

In a small stainless steel saucepan over medium heat, warm the vinegar until hot. Add remaining ingredients. Crush the berries with the back of a spoon.

Remove from the heat to cool. Cover and steep in a cool place 2 to 3 days. Place the pan over medium heat and bring to a simmer. Remove from the heat and strain liquid into a sterilized jar. Discard the solids.
