Isabel’s Blueberry-Banana Bread
INGREDIENTS:
- 1/2 cup butter, softened
- 1 ¼ cups sugar
- 2 eggs
- 1 ½ cups mashed ripe bananas
- 1 cup fresh blueberries (or frozen)
- 2 ½ cups all-purpose flour
- ½ cup buttermilk
- 1 tsp. baking soda
- 1 tsp. salt
Preheat oven to 350 degrees. Grease just the bottom of 9-inch loaf pan. Stir sugar, butter, eggs, bananas and buttermilk in large bowl until mixed. Stir in flour, baking soda and salt just until moistened. Stir in blueberries. Pour batter into pan. Bake about 1 hour and 15 minutes or until an inserted toothpick comes out clean. Cool 5 minutes. Loosen sides of loaf from pan, invert on wire cooling rack and cool completely.
