Contrary to popular belief, the larger asparagus spears are actually more tender than skinnier ones. These jumbo and extra large spears (at least 1/2" diameter at the base) come from younger and healthier asparagus plants. Larger asparagus is very popular in Europe, while North Americans tend to favor more slender stalks.

Whatever size asparagus you prefer, be sure to select spears that are firm and green, and have tightly closed tips.

When you get your asparagus home store it in the refrigerator standing upright in one inch of shallow water and covered with a plastic bag to keep it moist. You can also simply wrap the bases of the stalks in damp paper towels, place the asparagus in a plastic bag, and refrigerate. It will keep well for several days but, at Victoria Island Farms we prize freshness, so we encourage you to eat your asparagus as soon as you can.
