Roasted Asparagus with Thyme
INGREDIENTS
- 2 pounds asparagus
- 2 Tbs. extra virgin olive oil
- 1/2 tsp. dried thyme or 1 tsp. chopped fresh thyme
- 1/8 tsp. pepper
Heat oven to 425 degrees.
Wash and trim asparagus. Drizzle asparagus with olive oil and toss lightly to coat. Place asparagus in a shallow baking dish that holds them in a single layer, such as a jelly roll pan. Sprinkle with thyme, salt & pepper.
Roast in oven at 425 degrees for 15 minutes, or until tender.
