Roasted Asparagus with Lemon
INGREDIENTS
- 2 pounds trimmed asparagus
- 1 Tbs. extra-virgin olive oil
- Salt & pepper
- 1-2 lemons cut into wedges
Heat oven to 425 degrees.
Put asparagus in a jelly-roll (15 ½ X 10 ½) pan. Drizzle with oil and sprinkle with salt and pepper to taste. Turn till evenly coated, then arrange in a single layer.
Roast 10-15 minutes, or till tender with pierced and tips start to brown. Serve warm, with lemon wedges.
