Asparagus With Mayonnaise Nicoise
INGREDIENTS
- 1-cup mayonnaise, preferably homemade
- 1 tablespoon capers, drained, plus additional to taste
- 1 tablespoon each tomato paste and anchovy paste
- 1 garlic clove, peeled and minced
- Large pinch of oregano
Combine all ingredients in the bowl of a food processor fitted with a steel blade, and process until smooth, then stir in additional capers to taste.
Makes about 1 & 1/4 cups sauce.
