Asparagus is not only rich in vital nutrients, it's also rich in history. The ancient Egyptians began cultivating asparagus more than 2,000 years ago. Greeks and Romans prized asparagus for its unique flavor, texture, and medicinal qualities. They ate it fresh when in season and dried the vegetable for use in winter. In fact, the word asparagus derives from the Greek root asparagos, meaning "sprout" or "shoot".

Asparagus has enjoyed great popularity throughout the world and across history. It became very popular in England and France in the 16th century and from there, it spread to the European colonies in North America. King Louis XIV of France craved asparagus so often, he commanded his royal gardeners to raise it in greenhouses so he could enjoy it year-round. In China, candied asparagus spears have been a special treat for centuries.

Asparagus was first planted in the San Joaquin Delta during the 1860’s. The moderate climate and fertile soil, contributes to the outstanding quality of Asparagus grown in California.
